Easy Cheesy Zucchini

INGREDIENTS:

2 zucchini halved lengthwise
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup ricotta cheese
1/4 cup shredded mozzarella cheese
2 tablespoons Parmesan cheese
1 teaspoon lemon juice
2 teaspoons dried basil
1/2 teaspoon salt
1/2 teaspoon black pepper

PREPARATION:

Preheat oven to 450 degrees. Scoop out the seeds of each zucchini half and season with 1/2 teaspoon salt and pepper. Mix the ricotta, mozzarella, Parmesan, lemon juice, dried basil, and the remaining 1/2 teaspoon of salt and pepper in a bowl. Divide the cheese mixture between the four zucchini halves and arrange onto a greased baking sheet. Bake until zucchini is tender and the filling is beginning to brown, about 15-20 minutes.
